Cheddar Beef Enchiladas

Ingredients

1 lb. ground beef
1 envelope taco seasoning

1 cup water
2 cups cooked rice
1 (16 oz.) can refried beans

2 cups shredded cheddar, divided
10-12 flour tortillas (8 inches)
1 jar (16 oz.) salsa
1 can (10 oz.) cream of chicken soup, undiluted.

In skillet, cook ground beef, drain.  Stir in taco seasoning and water.  Reduce heat and cook until liquid is almost evaporated.  Stir in cooked rice.  Set aside.

Spread about 2 tbsps of refried beans, 1/4 cup of beef miture and 1 tbsp. cheese down the center of the tortilla. Wrap like a burrito and place seam down in a greased 13 x 9 x 2 pan.

Combine salsa and soup. Pour over enchiladas.  Sprinkle with more cheese.

Bake at 350 for about 25 minutes uncovered.

Serve with sour cream or guacamole.
