Spaghetti alla Carbonara


1 lb. spaghetti
2 tbps. olive oil
1 lb. bacon
5 garlic cloves, finely chopped
1/4 tsp. crushed red pepper
1/2 cup white wine
2 large egg yolks
1/4 cup boiling pasta water
1/4 cup fresh parmesan cheese
Handful of freshly chopped parsley
Salt and pepper

1. Cook pasta according to package directions.
2. Cook bacon in skillet. Add olive oil, garlic and crushed pepper flakes for 2 minutes.
3. Add wine and reduce liquid by half. About 1 minute.
4. In a bowl, whisk yolks. Add 1/4 cup of the boiling pasta water.
5. Drain pasta and add pasta to pan with bacon and garlic and remove from heat.
6. Add egg mixture, cheese, pasrley, salt and pepper. Toss. Adjust seasonings.

Serve immediately.
