Vikki's Chicken Soup

INGREDIENTS:

* 2 Tablespoons vegetable oil
* 2 medium onions, chopped
* 3 medium carrots, cut into 1/4-inch rounds
* 3 celery ribs, cut into 1/4-inch thick slices
* 1 (6- to 7-pound) chicken or 4-5 chicken pieces
* About 3-4 qts. chicken broth. Enough to just about cover the
chicken.
* 2 tbsp. fresh chopped parsley
* 1/2 teaspoon dried thyme
* 1 bay leaf
* 1 package Good Seasons Dry Italian Dressing Mix
* Salt and freshly ground black pepper
* 2 cups egg noodles
* Chopped fresh parsley, for garnish

PREPARATION:
Heat the oil in a brothpot over medium heat. Add the onions, carrots, and
celery and cook, stirring often, until softened, about 10 minutes. Add chicken,
chicken broth, parsley, thyme, Good Seasons Mix and bay leaf. Simmer for 2 hours.
Remove chicken pieces. Remove meat from bone and cut into chunks. Put back into soup.
You may have too much chicken left so use as much as you want and then save chicken
for something else.

Boil water in another saucepan. Cook egg noodles according to directions.
Drain. Add to soup. Salt and Pepper soup to taste.
