Chicken Scampi (From Zeiterion Theatre Cookbook)

•3 tbsp. lemon juice
•¼ cup margarine
•¼ cup oil
•¼ cup chopped green onions
•1 tbsp. minced garlic
•2 lbs. boneless chicken breast, cut into ½ inch pieces.
•1 tsp. salt
•½ tsp. pepper
•¼ cup minced fresh parsley
•1 tomato chopped
•Hot pasta (linguine or spaghetti)

•In skillet, heat together margarine and oil; saute onion and garlic briefly. Add lemon juice, chicken, salt, pepper and parsley. Cook, stirring constantly, 6-8 minutes until chicken is done.
•Add tomatoes and heat through.

Tip from Rehab cook who made this recipe: Have some chicken broth on hand to tone down the lemon juice. It was a bit much. I used 2 plum tomatoes.
