Vikki's Skillet Beans, Rice & Kielbasa

1 Tbsp. Olive Oil
1 Tbsp. Butter
1 Pkg. Kielbasa, diced (I used Turkey kielbasa for less fat)
1 Medium onion, diced.
3 Cloves, garlic, minced
1 cup Basmati Rice
2 cups Low Sodium Chicken Broth
15 oz, can pinto beans, drained
1/2 tsp. Italian Seasoning
1/4 tsp. Red Pepper flakes (careful here, this gives it a kick, if you don't like spice, put less).
Pinch of Salt and Pepper
Parsley


Heat Oil and butter in a skillet.  Stir in Kielbasa and onion and saute until onion is softened.

Add in minced garlic and saute until fragrant.

Add in Basmati Rice, chicken broth, pinto beans, Italian Seasoning, red pepper flakes.

Bring to a boil, cover and reduce heat to medium.

Gently simmer for about 20 minutes or until rice is done.  Stir to prevent sticking at the end.  

Sprinkle with Parsley.
