Vikki's Crinkle Dessert

So easy and you won't be able to stop eating this...

Phyllo Dough (looks like this picture).  2 rolls come in this package.  You will use 1 roll.
2 sticks, unsalted melted butter

Custard
1 cup sugar
1 cup milk
2 eggs
2 tsp.vanilla
1-tsp. cinnamon (We used 1 tsp and we liked it, but not all Crinkle recipes have cinnamon).

Simple Syrup
1 cups sugar
1/2 cup water
Cornstarch

Preheat oven to 350.

Brush some melted butter on a 13 x 9 x 2 baking dish.  The pan matters.  A glass one worked best for me.

Take the 2 Phyllo sheets at a time.  Crinkle them like an accordion and lay them in the pan side by side.  Make sure it's 2 sheets or this won't come out.  Bake for 10 minutes.

Remove Phyllo dish and spread melted butter over it evenly.  Bake another 10 minutes.

Make the custard.  Mix all ingredients with a whisk until combined.

After the Phyllo dish has baked for the second round of baking, take out of the oven and pour the custard over the Phyllo.  Bake for another 30 minutes until golden brown.

Make the simple syrup.  You want this to get a little thick.  I boiled it for a bit and then let it sit and it thickened a bit. However, a little cornstarch stirred in helps to thicken it up.  I ended up using about 3/4 tsp. adding and stirring a little at a time until it thickened to the consistency I wanted.

Pour most of the simple syrup over the Crinkle Dessert, but leave a little in the saucepan.  The syrup in the sauce pan we thicken more and turn a whitish color. (Reminds me of Ma's Honey-dipped Donuts).  Put the rest of that on top of the dessert.
