Vikki's Baked Scallops


 2 lbs. Sea Scallops
1 tsp. Thyme
1/2 cup Buttermilk
20 Ritz crackers, crushed
1/4 cup melted butter
1 lemon (optional)

Heat oven to 400 degrees.

In a bowl, season the scallops with salt and pepper.  Add thyme and buttermilk and toss to coat. 

Evenly place the scallops in a casserole dish.  Sprinkle the cracker crumbs over top and then top with the melted butter.

Bake for 20 minutes.  Remove from oven, squeeze lemon over top (optional)
