Memere's Beans

Vikki Notes:  This was my Memere's recipe, who made these for special events and everyone loved them.  My Memere & Aunt Rita were expert bean makers.  So glad to have this recipe!


  • 2 lbs. Goya Navy Beans (2 bags)
  • 1 Large onion
  • 1 lb. Lean Salt Pork
  • Grandma's Molasses
  • Salt & Pepper


Soak the Goya Navy Beans in water overnight.  Drain water.

Chop onions,  Cut up salt pork.

Put beans, onions and salt pork in roasting pan.

This is where it gets interesting......

Take 14 tablespoons of the molasses and dribble over the beans.  Do not stir it up.

Then put 1 more tablespoon of molasses over it for good luck,  (This Boisvert tradition must never be overlooked!).

Salt and Pepper (be careful of the salt because the salt pork salts the beans also)

Cover the beans with water from 1 inch of the top.  Cover the pan.

Bake at 450 until it boils.  Then, reduce to 350 and cook (covered) for 3 hours.

After 3 hours remove cover and cook until the salt pork browns.

Aunt Rita's Tip:  Taste it.  If more molasses is needed, you can add it at the end.
