Clam Boil Stew

Ingredients

  • 1 can beer
  • 1 lb. chopped clams(get at seafood deli)
  • 1 lb. chourico or linguica, sliced
  • 1 lb. hot dogs sliced (I use a little less than a lb.)
  • 1 lg. onion, chopped
  • 1 tsp. chopped garlic
  • 10 link sausages (boil in water, reserve 1 &1/2 C. of the water you cooked sauages in)
  • 2 Tbs. olive oil
  • 2-3 Tbs. wet crushed red pepper
  • 3 bottles clam juice
  • 3 C. water
  • 4-5 lg. potatoes, peeled and cubed
  • pepper
  • salt

Directions

Saute onion in olive oil until tender, add garlic, chourico, crushed pepper, and cook 5 minutes. Add clam juice. Slice the cooked sausages and add to mixture with sausage water. Add the rest of the ingredients. Bring to a boil, then lower heat and cook until potatoes are cooked. Salt and pepper to taste. The liquid should just cover the ingredents.
