2 lbs. Mini Rigatoni
2 tbsp. olive oil
1 cup chopped onion
2 cloves garlic, minced
1 lb. package of Italian Sausage (any kind). Remove casings and cut into small pieces.
1 (28 oz.) can plum tomatoes, drained and then crush them by hand.
1/2 cup light cream
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
1/2 tsp. salt
Pepper
Parmesan Cheese
Cook pasta according to package directions. Meanwhile in a large skillet over medium-high hear, saute onion and garlic in olive oil for 2 minutes, or until tender. Add sausage and tomatoes. Reduce heat to medium and simmer for 7 minutes (or until sausage is almost all cooked through). Add cream, parsley, basil, salt, pepper and simmer for 5 minutes. Toss cooked pasta with sauce and serve. Sprinkle with Parmesan Cheese.
