Penne with Tomatoes and Chicken


1 (16 oz.) pkg. Penne Pasta
1/4 cup extra virgin olive oil
1 tsp. fresh garlic, chopped
1 (28 oz.) can stewed tomatoes, drained
1 tsp. dry basil
2 lbs. cooked chicken breasts (about 4), cubed
8 oz. shredded mozarella
Salt and fresh ground pepper to taste

Cook pasta according to package directions and drain.

Heat olive oil in skillet. Add and garlic and saute for a minute. Add tomatoes (and break them up a little) and basil. Cok 2 minutes. Add chicken and simmer for 5 minutes.



Toss chicken with penne pasta and mozarella cheese. Season with salt and pepper. Serve immediately.
