
1 bag (32 oz.) frozen hash brown potatoes
1 lb. sausage (or whatever you want..bacon is good too)
1 medium onion, diced
1 green pepper, diced
1 1/2 cups shredded mild cheddar
1 dozen eggs
1 cup milk
1 tsp. salt
1 tsp. pepper
1 tsp. dried chives
Cook sausage, crumble and drain. In another pan, saute frozen hash browns, green pepper and onion in about 3 tbps. margarine. Add sausage to vegetables.
In a bowl, whisk eggs, milk, salt, pepper and chives.
Use cooking spray and spray 13 x 9 pan. Put a layer of sausage/potato mixture. Sprinkle some cheese. Layer again, ending with cheese.
Pour egg mixture over top of casserole.
Cook at 350 for about 45 minutes.
