Shrimp in Coconut Sauce




Ingredients:
• 1 ½ lbs. large shrimp, peeled and deveined
• Goya Adobo Seasoning with pepper
• 3 tsp. olive oil
• 2 cups chopped onion
• 3 scallions, sliced very thin, both white and green
• 3 cloves garlic, minced
• ½ cup tomato sauce
• 1 Pkg Sazon goya
• 1 cup clam juice
• 1 can Goya coconut milk
• 4 cups hot cooked white rice

Preparation:
• Season shrimp with Adobo and set aside.
• In a skillet, heat oil on medium. Stir in onion, scallion and garlic. Cook,
stirring often until onion is translucent. About 10 minutes.
• Stir in tomato sauce and cook 5 minutes. Stir in Sazon, clam juice and
coconut milk, bring to boil.
• Lower heat and simmer for 5 minutes until sauce thickens.
• Add shrimp and cook, turning once until shrimp are cooked through. About 5
minutes.
• Transfer to serving platter, garnish with scallions.
• Serve accompanied by rice.
