Sausage, Black Bean & Tortilla Casserole

1 tbsp. olive oil
1 large red onion, chopped
1 large red bell pepper, seeded and chopped
2 garlic cloves, minced
1 can (14 oz.) diced tomatoes
1 cup salsa
2 tsp. ground cumin
1/2 tsp. dried oregano
1/4 tsp. salt
Freshly ground black pepper to taste
2 cans (15 oz. each) black beans, drained and rinsed.
5 to 6 Italian sausages. Remove casings.
8 flour tortillas cut into quarters.
4 cups Mexican blend shredded cheese.

You need a large casserole dish orlarge oval shaped baking dish sprayed with cooking spray.

In a large skillet over medium heat, warm the olive oil. Add the onion, sausage, red pepper and garlic and saute until the vegetables are tender and the sausage is cooked.

Add the tomatoes, salsa, cumin, oregano, salt and pepper. Mix well.

Stir in beans.

Spread 1/3 of the bean and sausage mixture on the bottom of prepared baking dish. Top with flour tortillas and sprinkle with 1 cup of the cheese. Repeat layers. Finish with remaining sausage and bean mixture.
Cover and bake for 40 minutes
