Busters Famous Coconut Chicken

Ingredients:
· Boneless chicken breasts, cut into small strips. Set aside.
· 1 egg
· ½ cup fat-free buttermilk
· 1 ½ tsp. salt (may use less if desired)
· ½ tsp. baking powder
· ½ cup beer
· 5 oz. cake flour
· ½ tsp. baking soda
· 2 pkgs. sweet, tender coconut

Preparation:
· Combine all the above together in one bowl. (Should have the consistency of pancake batter).
· In second bowl, have some all-purpose flour (for dredging the chicken).
· In the third bowl, put 2 pkgs. coconut
· Dredge the chicken in the all purpose flour, then roll in the buttermilk batter, then roll in the coconut flakes.
· Deep fry until golden brown.
