Ingredients:
· 2 cups sifted flour
· 2 tsp. baking powder
· 1 ½ tsp. baking soda
· 1 ½ tsp. salt
· 2 tsp. cinnamon
· 2 cups white sugar
· 1 ½ cups canola oil
· 4 eggs
· 2 cups grated carrots
· 1 (8 oz.) can crushed pineapple (in juice, not syrup), drained.
· ½ chopped walnuts
· 1 cup flaked coconut
Preparation:
· Sift together flour, baking powder, baking soda, salt and cinnamon. Add sugar, oil, eggs and beat well with hand mixer for about 3 minutes. (batter will appear to be dry). Stir in carrots, pineapple, nuts and coconut. Batter will moisten. Pour into (2) 9” round layered pans that have been greased and floured.
· Bake at 350 for 30-35 minutes. Insert a clean butter knife in center of cake, if it comes out clean, it’s done.
Cream Cheese Frosting
· 1 stick of butter or margarine (softened)
· 1 (8 oz.) pkg. cream cheese (softened)
· 2 tsp. vanilla
· 1 lb. box of confectioners sugar.
With a hand mixer, combine butter, cream cheese and vanilla until smooth. Add sugar gradually and mix well. Garnish cake with crushed walnuts if desired.
