Italian Seasoned Bread Crumbs
Grated Parmesan Cheese
2 eggs
1 onion
1 pkg. sliced mushrooms
1 Tbsp. flour
1 Tbsp. flour
1 cup marsala wine
2 cups chicken broth

Slice chicken breasts into thin slices. In a bowl, beat 2 eggs and stir the chicken inside.
In a plate, mix the breadcrumbs and some Parmesan Cheese. Take each piece of chicken and coat with the breadcrumb mixture and pat it down.
I used the air fryer for this next part. I preheated my air fryer to 375. Then, I put in an air fryer liner and placed the chicken on the tray. I sprayed the top of each chicken piece with Pam. Then, air fried for 8 minutes. *** If no air fryer, you can fry the chicken in oil in a pan.
Put chicken in a large baking dish.
In a fry pan, melt 2 tbsp of butter and saute the onion until softened. Then, add the mushrooms and cook those. Add 1 tbsp. flour and stir. Add the marsala wine, chicken broth and a little Kitchen Bouquet. Cook for a few minutes until thickened.
Top each piece of chicken with a slice of fresh mozzarella. Pour the gravy mixture over the top of the chicken and sprinkle with the parlsey.
Bake at 400 for about 25 minutes. I served with mashed potatoes and a vegetable.
