1 cup Panko Plain Crumbs
1 cup Plain Bread Crumbs
1 TBSP salt
2 tsp. sugar (I added more like 4 tsps)
1/2 TBSP Onion Powder
1/2 TBSP Garlic Powder
1 tsp. chili powder
1 tsp. ground coriander
1 tsp. oregano
1 tsp. paprika
1 tsp. basil
1 tsp. marjoram
1/2 tsp. black pepper
1/2 tsp. white pepper
2-3 TBSP corn meal (my addition)
Put all ingredients in food processor and pulse. You want some of the Panko to turn to powder, but not all, so don't over pulse.
Put mixture in Ziplok bag and coat chicken.
Place on sheet pan. I usually line with parchment paper. Bake at 400 for 40-45 minutes or until chicken is cooked.
I have way too many recipes and with adult kids who cook and many friends wanting these same recipes, it became easier and much more organized to put them all on here and direct them to this blog. These are recipes that I actually make all the time, so there's no surprises. Keep checking, as I'm constantly updating. Please add a comment if you try one of these recipes too. Thanks, Vikki
