Vikki's Colcannon Potatoes


This is a great St. Patrick's Day side dish.

2 1/2 lbs. red potatoes, washed and quartered

6 Tbsp. butter
2 tsp. minced garlic
1/2 good sized cabbage, roughly chopped (I tried to avoid the harder leaves towards the core of the cabbage for this dish)
1/2 to 3/4 cup of milk
1 tsp. onion powder
4 slices bacon, cooked and crumbled.
2 green onions, thinly sliced
Salt, pepper

In a large pot, cook the potatoes in water that has 1 tsp. of salt.  Cook until tender.  Drain and transfer to a bowl and set aside.

Dry the pot and add 2 Tbsp. of butter.  Melt butter and add garlic.  Saute garlic until fragrant.

Add chopped cabbage.  Cook and stir until the cabbage is softened.  This takes several minutes.  Season with 1/2 tsp salt and 1/2 tsp pepper. Remove from heat.

Using a hand masher, mash the potatoes with the cabbage.  Add 1/2 milk, the onion powder, remaining butter salt and pepper.  Mash until smooth, but kind of chunky.  Add milk as needed to obtain this consistency.  Season with more salt and pepper to taste.

Transfer to serving dish.  Sprinkle with crumbled bacon and chopped green onions.
