This recipe is a mixture of two recipes, that came out quite good for a large group of people. Easy and quick. Nothing fancy, but everyone liked it a lot.
4 chicken breasts (the ones I had were large and bit too big, so I sliced them length-wise, that made 8 of them. I then put each in a Ziploc bag and pounded them until they were flatted out). Put aside.
To make the stuffing. Saute 2 sliced celery and 1 onion in 4 tablespoons of butter until softened. Add 2 cups of chicken broth. Take off the burner and add a 12 oz. package of Pepperidge Farm Herb Stuffing. Stir and mash a little. Set aside and let cool down.
After stuffing has been cooled down, add 2 beaten eggs and mix well.
Put some stuffing in the chicken breast and roll up from the small end to the larger end and place in a baking dish.
To make the sauce: I made 3 packages of Knorr Chicken Gravy (according to package directions). Pour over the chicken breasts.
Bake at 350 for about 40 minutes or until chicken registers at 165 degrees.
