Vikki's Notes: Prepare the rice the day before and keep in fridge until ready to make the fried rice. Can also add other ingredients (chicken, pork) if desired.
3 cups cooked white rice (prepared the day before)
3 tbsp. sesame oil
1 cup frozen peas and carrots (thawed)
1 small onion, chopped
2 tsp. minced garlic
2 eggs, beaten
1/2 cup soy sauce
On medium-high heat, heat oil in skillet or wok. Add peas and carrots mix, onions and garlic. Stir fry until tender. Lower the heat to medium low and push the mixture off to one side. Pour your eggs on the other side and stir fry until scrambled. Then, add rice and soy sauce and blend together well until thoroughly heated.
