Prairie Land Pot Roast


1 4 lb. beef chuck roast
2 chourico
2 tbsp. parsley
1/2 tsp. pepper
1 small bottle of Catalina Salad Dressing
2 large onion cut into chunks
2 lbs. potatoes cut into chunks
1 lb. carrot cut into 1" pieces

Season both sides of roast with salt and pepper. Brown meat on high in 1/2 of the Catalina dressing in a pan.

Add all ingredients with 1 cup of water in crock pot. Put the chourico on sides. Pour the the rest of the Catalina dressing over top.

** This can also be done in the oven. Cook meat at 325 for 1 1/2 hours before adding the remaining ingredients. Cook another hour.
